Auto multi-line detection is now enabled by default. Updating the getting started section and version alert accordingly.

What does this PR do? What is the motivation?

  • Configuration examples now show auto_multi_line_detection: false as the way to opt out, instead of true to opt in.
  • The version alert notes which Agent versions still ship with the feature disabled by default.
  • Restores the "Default settings" section describing enable_datetime_detection and enable_json_detection, which is still needed as context for the "You can disable these features" instructions below it.
